For this Slow Cooker Sunday we made a coconut curry chicken!! This is super simple and delicious!! Give it a try and let us know what you think! P.S. this is keto friendly!
Serves 2-3
Ingredients:
1 lb Chicken
1 can of unsweetened coconut milk (13.50z)
1 Tbs yellow curry powder
1 can of diced tomatoes drained (14.5oz)
1/2 of small onion diced
1/2 tsp ground ginger
1 Tbs paprika
1Tbs minced garlic
Salt & Pepper to taste
Instructions:
Add all the ingredients to crock pot.
Cover and cook for 3-4 hours
Crack lid when begins to boil.
